PREP TIME 15 MINUTE
INGREDIENTS:
1 CAN ORGANIC PUMPKIN PUREE (14 OUNCES)
1 ORGANIC WHIPPING CREAM (14 OUNCES)
1/4 TO 1/2 CUP ORGANIC HONEY ( DEPENDING ON HOW SWEET YOU WANT IT)
1 TEASPOON PUMPKIN SPICE
1 TEASPOON VANILLA EXTRACT
1 SMALL BOX OF SWEDISH GINGER SNAPS
GET 2 BOWLS
TO THE 1ST ONE ADD PUMPKIN, PUMPKIN SPICE AND HONEY. MIX UNTIL WELL BLENDED.
TO THE 2ND ONE ADD THE WHIPPING CREAM AND VANILLA EXTRACT. WHIP UNTIL IT FORMS SOFT BUT STIFF PEAKS. BE CAREFUL NOT TO OVER WHIP. CAREFULLY FOLD WHIPPED CREAM INTO THE PUMPKIN MIXTURE.
GET 6 TO 12 WINE GLASSES AND CRUMPLE 1-2 GINGER SNAP COOKIES AT THE BOTTOM AND FILL WITH PUMPKIN WHIP MIXTURE. TOP WITH A SINGLE COOKIE AT AN ANGLE ON TOP.
THEY ARE ABOUT 50-60 CALORIES EACH DEPENDING ON SIZE OF PORTION AND AMOUNT OF HONEY. IF YOU WANT TO ADD SOMETHING NOT SO HEALTHLY BUT GOOD…SWIRL AT LITTLE CARMEL SAUCE AROUND THE TOP.
